CULINARY EXPERIENCES
Our kitchen & pastry team consists of knowledge & experience combined with youthful innovation & enthusiasm. Our culinary inspiration is international and we like to cook dishes from abroad. At the same time, the team is proud of its region & local products. The estate has its own cattle of the Brandrode IJsselvallei breed, which are processed from head to tail into signature dishes.
FROM FARM TO TABLE
Poultry & their eggs come from the local farm, milk for our ice cream & wedding cakes comes from the nearby milk tap. We ask the miller to make our flour & flour for the wedding cakes, as well as for our own bread. For fruit & vegetables, we are guided by the seasons. Freshwater fish such as pikeperch, eel & crayfish are caught in the nearby rivers & lakes. Our Registered Vinologist suggests suitable wines to go with the culinary content of the day. The estate also has its own wine made from grapes from our regional vineyard. This versatility combined with unlimited creativity makes us unique in who we are.
INTERNATIONAL CUISINES
Our culinary team is specialised in various cuisines & customs from all over the world, whether you are looking for Persian, Asian, Arabic or European cuisines, our team has not only been trained in them but has also experienced the dishes in the countries of origin in order to serve them authentically from seasoning to presentation.
PATISSERY
Ashford Wedding & Event Designers has its own Pastry Chef who, among other things, can create your wedding cake. Your own style, symbol or colour scheme are only a fraction of the possibilities.
QUALIFICATIONS
Our kitchen team has qualifications in the recognised disciplines of Pastry Chef & Pâtissier, Chef de Cuisine, as well as Registered Vinologist.
